A recipe for a July 4th celebration, or any other time you need a festive side dish:
1 package (4-ounce size) JELL-O Brand Strawberry Flavor Gelatin Dessert, or any red flavor
1 package (4-ounce size) JELL-O Brand Berry Blue Flavor Gelatin Dessert
1 cup cold water
1 package (4-ounce size) JELL-O Brand Lemon Flavor Gelatin Dessert
1 pint (2 cups) vanilla ice cream, softened
1 ½ cups blueberries
STIR 1 cup of the boiling water into each of the red and blue gelatin in separate medium bowls at least 2 minutes until completely dissolved Stir ½ cup of the cold water into each bowl.
PLACE bowl of red gelatin in larger bowl of ice and water. Stir until thickened, about 8 minutes. Stir n strawberries. Pour into 9x5-inch loaf pan.* Refrigerate 7 minutes.
MEANWHILE, stir remaining 3/4 cup boiling water into lemon gelatin in medium bowl at least 2 minutes until completely dissolved. Spoon in ice cream until melted and smooth Spoon over red gelatin pan. Refrigerate minutes.
MEANWHILE, place bowl of blue gelatin in larger bowl of ice and water. Stir until thickened, about 7 minutes. Stir in blueberries. Spoon ver lemon gelatin in pan.
REFRIGERATE 4 hours or until firm. Unmold. Garnish as desired.
*As a product of the sixties, I use a Tupperware mold instead. Use whatever is handy. The joy of Tupperware molds is that gelatins slide out easily. After years of struggling with warm-water "baths," having a "slider" is very appealing.
