Preheat oven to 350° F.
1 medium
onion-chopped finely
2 carrots—chopped finely
2 stalks celery, chopped finely
1/2 green pepper, chopped finely
2 tablespoons butter
2 lbs. lean ground beef or
(1 lb. ground beef and I lb.
ground turkey)
1/3 cup catsup
1/4 to 1/3 cup freshly grated Parmesan cheese
2 eggs
1/2 to 3/4 cup flavored, dry breadcrumbs
salt and pepper to taste
garlic powder to taste (or, use grated fresh garlic, if you have some)
1) Preheat oven to 350° F.
2) Melt butter in medium skillet over medium heat. Add chopped celery, carrot, onion and green pepper. Season to taste with garlic powder. Sauté for 5 to 7 minutes, stirring frequently, until soft and onion is translucent. Remove from heat; let cool.
3) Season ground beef with salt, pepper and garlic powder to taste. Add to ground beef. ketchup,
Parmesan cheese, eggs, breadcrumbs and sautéed vegetables. Mix lightly until all ingredients are combined.
4) Pat gently into meat loaf shape and place in lightly greased baking dish or pat into lightly greased loaf pan.
5) Bake at 350° F. until done. Start checking it after an hour; depending on your oven, total
cooking time can vary between I hour and I hour 15 minutes. Let cool a little before slicing.
YIELD: Six to eight servings.
