Not-Quite Salvatore’s Italian Salad Dressing
In
jar of blender combine
½
cup olive oil
2 tablespoons minced onion
1 tablespoon freshly grated Parmigiana-Reggiano cheese
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
1 teaspoon basil
1 teaspoon orégano
1 teaspoon sugar
1 teaspoon salt
1 teaspoon freshly ground black pepper
Blend
for 30 seconds.
Add
¼ cup good quality red-wine
vinegar*
2
tablespoons lemon juice (together
should be ⅓
cup to add to blended ingredients above.
*
if you are doubtful about the red-wine vinegar, substitute 2 tablespoons good
quality Balsamic vinegar combined with more lemon juice, ~2 tablespoons,
i.e. enough to have ⅓ cup total to add to blended ingredients already in jar.
Blend
for 30 seconds, or until well combined.
