Cheese and White
Wine Chicken
Spray casserole dish with
cooking spray and place four chicken breasts inside. In a bowl mix:
1 can cream of celery soup
1 can cream of chicken soup
1 cup white wine
1/2 cup grated Monterey Jack cheese
1/2 cup cheddar cheese
Preheat oven to 350° F
Combine sauce ingredients: soups
and wine.
Pour sauce over the chicken. Cover with foil and bake at 350° F
for an hour and thirty-five minutes.
Remove foil, sprinkle with grated cheese and, if desired, a few sliced almonds;
then cook for twenty-five more minutes, uncovered.
Serve with rice, white-wine Sangria or a good red or white wine which appeals.
Yield: Serves four.
Good for guests.
Pretty much a no-brainer; enjoy an aperitif, cooperate concocting a
salad. Push the button on your rice
cooker about forty-five minutes before the chicken is scheduled to be served.
Ten or fifteen minutes before serving, put a great loaf of crusty bread
in your oven. Relax.
