(Below is an alternative to the more simple, family-favorite, dressing, found at: Family's Blue Cheese Dressing)
1 cup Homemade Basic Mayonnaise (see recipe
below)
½ cup heavy
cream
1 teaspoon brandy
2 ounces blue cheese, crumbled
2 tablespoons white wine vinegar
Stir together all the ingredients in a medium-size bowl.
Chill several hours.
2 large egg yolks
1 teaspoon Dijon mustard
1 teaspoon lemon juice
Salt and freshly ground pepper to taste
1 cup olive oil
In medium-size bowl, beat egg yolks, mustard, lemon juice, salt and pepper with a whisk. Whisk in oil a few drops at a time, until the mixture thickens and begins to look like mayonnaise. Then beat in the remaining oil in a thin stream. Add a little more lemon juice if mixture is too thick.
Yield: 1 cup.DO NOT USE HELLMAN'S or SOME OTHER STORE BOUGHT, NON-HOMEMADE MAYONNAISE. THESE ARE DIFFERENT ANIMALS AND STORE BOUGHT, i.e., HELLMAN'S. etc., ARE NOT OKAY SUBSTITUTES FOR HOMEMADE!
