Ingredients:
Apples
Sugar
Ground Cinnamon
Freshly ground nutmeg
Light brown sugar
Butter
Best for this recipe are (1) Cortlands or (2) Ida / Paula Reds.
6 cups sliced apple
½ cup white sugar
½ teaspoon cinnamon, ground
½ teaspoon nutmeg, freshly ground
½ cup brown sugar
⅓ cup butter
2 to 3 tablespoons butter, cut into pieces
Place the sliced apple in a 2-quart baking dish. Toss with a few tablespoons fresh lemon juice. Mix white sugar and spices and toss apples lightly with this mixture. Let sit a few minutes as you mix topping.
Combine the flour and sugar; add the butter and cit it in to make an even, crumbly mixture.
Sprinkle the mixture over the apple and bake the crisp in a moderate oven, 350° F. , until the apple is tender, approximately 50 minutes.
Dot the top with extra pieces of butter and return to the oven for about 10 minutes for extra crispiness.
Serve warm with cream, crème fraîche or vanilla ice cream.
